Tastes of Marche

Food: Dishes run from sea to hills:

  • Brodetto (Adriatic fish stew) and stoccafisso all’anconetana (salt cod) on the coast
  • Olive all’ascolana, stuffed and fried olives from Ascoli Piceno
  • Tagliatelle fritte, breaded and fried pasta patties filled with half-cooked tagliatelle, béchamel, mozzarella, Parmigiano Reggiano, and minced meat, typically served on a bed of meat ragù
  • Vincisgrassi, Marche’s answer to lasagna
  • Ciauscolo, a spreadable cured salami
  • Crescia sfogliata, a flatbread from Urbino
  • Maccheroncini, the fine egg pasta from the village of Campofilone
  • White truffles from Acqualagna, which holds a major truffle fair every autumn

Wines:

  • Verdicchio dei Castelli di Jesi and Verdicchio di Matelica are crisp, mineral whites and are among Italy’s best.
  • Reds include Rosso Conero (Montepulciano grape) and Rosso Piceno.
  • And let’s not dismiss Lacrima di Morro d’Alba (floral and aromatic), Offida Pecorino and Passerina and the incredible Vernaccia di Serrapetrona, the triple-fermented bubbly slightly sweet red.
